Spring Treats!

These light cookies are perfect for your spring entertaining and treats. We use our family’s favorite cookie press recipe, no food coloring, Seek Lavender Extracts and Seek Lavender Salt. The icing is Swiss Butter Cream, also a light, airy sweet treat. Spring is a great time to experiment with Seek Lavender Extracts. Spring Swiss Buttercream


5 egg whites at room temperature

2 cups unsalted butter at room temperature

1 3/4 cups granulated sugar

1 pinch Seek Lavender Salt

1 tsp of Seek Lavender Extract (lavender, lemon balm, or mint)


Add egg whites, sugar and salt in a bowl, give the mixture a brief whisk. Place the bowl over a pan of simmering water (double boiler). Be sure the water does not touch the bowl.

Whisk the egg whites occasionally as they heat. Once warmed, whisk constantly. Heat/whisk until reaching an internal temperature of 160ºF or until it’s not grainy between your fingers.

Transfer the bowl to a stand mixer, mix with a whisk attachment until room temperature glossy peaks. Switch to a paddle attachment.

While the mixture is running on low, add tablespoon sized dollops of room temperature butter one at a time ensuring the butter incorporates after each addition.

Once the butter is incorporated, add your extract. Do a final blend and add to pastry bag or frost with a pastry knife.
